Cocoa butter is a pale yellow fat pressed from cocoa mass. It is solid at room temperature but melts at body temperature, which is exactly why chocolate melts so pleasantly on the tongue. It has a delicate cocoa aroma and a long shelf life.
It is mostly fat, but it also contains antioxidants; in sensible amounts it is part of any good chocolate.
